This recipe brings out the rich, sweet flavors of slow-roasted tomatoes and aromatic garlic, simmered in olive oil until tender and caramelized. INGREDIENTS
· 1 head of garlic, peeled
· ½ c olive oil
· 10 oz small tomatoes
· 1 tsp dried rosemary
· 1 tsp dried Italian seasoning
· 1 tsp salt
· Pepper to taste
INSTRUCTIONS
1. Preheat the oven to 350 degrees Fahrenheit.
2. Peel the garlic and place the individual cloves into a baking dish (I use a 3-cup rectangular Pyrex dish but any dish will work).
3. Cover the garlic with oil and add in the spices. Stir to evenly coat the garlic. Then, add the tomatoes and stir again.
4. Bake for 1-1.5 hours or until the tomatoes are roasted and the garlic is tender and caramelized.
5. Let cool for 10 minutes before serving!
