Crispy potato latkes are a classic Chanukah dish made by shredding potatoes and onions, then mixing them with egg, flour, and seasoning. The mixture is formed into patties and fried until golden and crispy on the outside, while remaining tender on the inside. Often served with sour cream or applesauce, these latkes are the perfect balance of savory and crispy, making them a beloved holiday treat. This recipe serves a crowd, but you can easily halve the ingredients for a smaller batch!
INGREDIENTS
· 4 large Russet potatoes
· 2 large yellow onions
· 4 eggs
· 1 c all-purpose flour
· 1 tbsp salt, plus additional for topping
· 1 tsp ground pepper
· Neutral oil for frying
· 1 carrot stick for frying
INSTRUCTIONS
1. Wash and peel the potatoes and onions. Using a box grater or food processor, shred the potatoes and onions, placing them in separate bowls.
2. Using a cheesecloth or dry kitchen towel, squeeze out the liquid from the shredded potatoes until they’re as dry as possible.
3. In a large bowl, beat the eggs, salt, pepper, and flour until smooth. Add the shredded potatoes and onions, stirring to combine.
4. Heat about 1 inch of oil in a large frying pan. Place a carrot stick in the oil at the edge of the pan to help keep the oil clear. Spoon ½ cup portions of batter into the pan, spacing them about an inch apart for easy flipping.
5. Fry the latkes over medium heat for about 2 minutes on each side, or until golden brown.
6. Remove the latkes from the pan and place them on a cooling rack or paper towels to drain excess oil.
7. Serve warm with sour cream and chives, applesauce, or simply salt and pepper!
NOTES
*Pro tip: place a carrot stick in your frying pan to keep the oil clear and reduce the risk of splattering!
*Latkes can be cooked and frozen for up to 6 months. When ready to serve, simply thaw them and bake on a baking sheet at 400°F for about 10 minutes, or until they’re sizzling hot!
