Sfenj are delicious, golden, and fluffy Moroccan doughnuts, deep-fried to perfection. Crispy on the outside with a soft, airy interior, these sweet treats are often dusted with cinnamon and sugar or dipped in honey. Traditionally enjoyed during Chanukah, their fried nature symbolizes the miracle of the oil that burned for eight days. Perfect for enjoying with a cup of tea, sfenj are a beloved indulgence that brings warmth, sweetness, and a taste of holiday tradition in every bite.
INGREDIENTS
· 1 ½ tbsp yeast
· 1 tbsp brown sugar
· 1 ½ c warm water
· 4 c all-purpose flour
· 1 tsp salt
· 1 tbsp neutral oil or butter
· Sugar for dusting
· Cinnamon for dusting (optional)
· Neutral oil for frying
INSTRUCTIONS
1. Activate the Yeast: In a small bowl, combine the yeast, warm water, and sugar. Let sit for about 5 minutes, or until the mixture becomes bubbly.
2. Make the Dough: In a large bowl, mix the flour and salt. Gradually add the yeast mixture and knead until a smooth, elastic dough forms. Add the oil and knead a few more times to fully incorporate.
3. Let the Dough Rise: Cover the bowl with plastic wrap and let the dough rise in a warm place until it doubles in size, about 1 ½ to 2 hours.
4. Portion the Dough: Turn the dough onto a lightly floured surface and divide it into 16 equal portions. Roll each portion into a ball. Place the dough balls on parchment paper, cover, and let them rest for 10 minutes.
5. Shape the Donuts: While the dough is resting, heat at least 3 12 inches of oil in a deep pan to 300°F. Once the oil is ready, take one ball of dough and gently press your thumb through the center to create a hole. Carefully stretch it into a rough oval donut shape, being mindful not to deflate the dough or tear it.
6. Fry the Donuts: Gently place the shaped dough into the hot oil. Fry for about 45 seconds on each side, or until golden brown. Remove with a slotted spoon and transfer to a wire rack to drain.
7. Add the Finishing Touch: While the donuts are still warm, toss them in a bowl of sugar (with cinnamon if desired) to coat.
